La Lune Shiraz
As opposed to the first five 2021 Astral Project releases, the La Lune Shiraz brew used ‘wet’ skins, not fresh. The skins were collected whilst digging out the fermenters before the press, with 25-30% skins to wort. This beer was not inoculated in brewery, so was fermented by the yeast(s) used in the winemaking process.
The wort made for La Lune Shiraz was Pale, Munich and Wheat and a small amount of French Oak cubes added to the skins of the Shiraz to give it a bold and earthy flavour with undertones of liquorice or aniseed. Fermented on skins for five days and plunged twice daily, it was then racked to stainless tanks to finish fermentation and condition for packaging.
