Merlot Sour
Another addition to the Astral Project. The 2020 Merlot Sour won us Champion Hybrid Beer at the Independent Beer Awards so, we’d be silly not to bring it back again! As opposed to the first five 2021 Astral Project releases, this brew used ‘wet’ skins not fresh. These skins were collected whilst digging out the fermenters before the press. The Wort used for the Merlot followed the same recipe used in the 2020 version - a blend of Pale, Vienna and Wheat malts.
This sour was fermented on skins for 5 days and plunged twice daily then racked to stainless tanks to complete fermentation and condition for packaging.
Great acid drive, with flavours of strawberry, grape Hubba Bubba and a confectionary Raspberry on the nose.
